It helps to know mezcal, a distilled alcoholic beverage from Oaxaca, Mexico. is made from the heart of the maguey plant. The plant, a desert succulent, is split open with an axe and roasted in a tarp covered pit for several weeks, from which mezcal gains its distinct smoky flavor.
