In April 2013 our group of restaurant leaders gathered in New York City for the fifth annual Avero Elliot Underground Culinary Tour. Our goals were to provide a behind-the-scenes look at the city’s ever expanding restaurant trends, as well as inspire, elevate, and embrace new levels of thinking.
Together we explored fifteen of New York’s most progressive restaurants, wine bars, breweries, coffee shops, bowling alleys, cocktail lounges and Italian marketplaces. Along the way, we were privately hosted by passionate and accomplished chefs, restaurateurs, sommeliers, oleologists, brewmasters, chocolatiers, baristas and entrepreneurs who candidly shared their vision and articulated communal goals for setting a high bar of hospitality and devotion to pure ingredients.
We hope this book evokes memories of the city’s sights, sounds, flavors, and aromas, as well as the personalities and surprises that we encountered along the tour. Here’s to continuing our friendship and journey towards new experiences in the hospitality world!
