How Ketchup Met the Tomato

Many people assume that ketchup was initially an American discovery, and has always been made out of tomatoes. But ketchup originated in China long before American cooks ever considered adding tomatoes to the popular sauce.  The first English-language ketchup recipes from the beginning of the eighteenth century included fish, mushrooms, walnuts, anchovies, and even orange juice - but no tomatoes.
