What Eugene and Mollie Christian present in 250 Meatless Menus and Recipes is representative of just one part of the early 20th-century vegetarianism. They state in their preface that most recipes are not invented by the cook, but they are instead handed down as a tradition. What they offer are new versions of traditional recipes that are not meat-based. However, as with similar vegetarian cookbook authors of the time, their vegetarian beliefs are not based on a specific principle, whether religious or philosophical, but instead they come from vague notions of health which, at the time, were mostly anecdotal. The Christian sisters provide valuable insight into a time when people had brave new ideas, but they were not sure how to justify them.
