In this Issue I have tried to explain cookery technique that I have come to use  for the last 5 years cooking in age care modern kitchens.

  Using terms that are associated with professional Chef’s and Cook’s, this will help you learn to Cook for Australians Residents in Age Care and make it rewarding and fun.

It is all about making food that is hot at service and that has been cooked by a Solo Chef/Cook, cooking bulk food from your Table d’ Hot’e Menu for the day and serving  30 to 80 hot covers at requirement of  <75c in 10 to15 minutes, with only one Kitchen Hand or Care Helper.
