Raja, the recipe developer behind the Instagram account @Kauscooks, debuts with an expansive celebration of the South Asian flavors she grew up enjoying in her Pakistani home. Her creativity shines in her vast array of fusion dishes, including harissa-spiced lamb tacos, eggplant and coconut curry udon, masala fish and chips, and chile garlic paneer fried rice. There are plenty of recipes for traditionalists as well, among them beef biryani, lamb shank nihari, and tandoori chicken. Perhaps most mouthwatering is the extensive desserts section, featuring cardamom and rose buns, pistachio mango sticky rice, matcha and rose panna cotta, and chocolate coconut barfi. Most ingredients are readily available, though occasional recipes represent sourcing challenges: kadhi pakora (yogurt-based curry with dumplings), for example, calls for ajwain seeds, fenugreek leaves, and asafotetida. Raja's instructions are easy to follow, and recipes range from the unfussy in the "Weeknight Winners" chapter to the more involved in "Something Special," though some feel missorted (the "just 30 minutes of effort" allotted to the multistep Desi shepherd's pie, for example, seems ambitiously unrealistic). Still, home cooks seeking convenience will be pleased to see that several recipes can be prepared and frozen in advance for a future meal, including chicken tikka pie and Desi lasagna. The result is a worthy and memorable addition to any kitchen library.
