Publisher Description
Eustace Miles presents this refreshing perspective on vegetarianism which is atypical of other turn-of-the-century vegetarian advocates. In it, she decries the use of the word vegetarian because it implies a diet of strictly vegetables, which would be popularly difficult to accept. Instead, she advocates for simpler foods, which need not include vegetables at all. It is instead a diet of fruits, grains, nuts and milk products, although vegetables would obviously be welcome. In short, Eustace Miles is a vegetarian who refuses to be called a vegetarian. She is an advocate for what we would call today unprocessed foods, and in that respect she stands alone, years ahead of her time.
