All About Food Allergies

Food allergy is a serious medical condition affecting up to 15 million people in the United States, and the situation is getting worse. A food allergy reaction can cause symptoms that range from mild to life-threatening. 

Eight major allergenic foods (referred as Big-8), that comprise of milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat and soybean, account for about 90% of all food allergies in the United States. There are antigens that are non-food but could be found in food, such as antibiotics, herbicides, pesticides, hormones, and steroids. USDA request food manufacturers must test these Big-8 allergens and declare according to the USA food allergen labeling act (FALCPA). 

This book intends to share basic information on food allergies, helping readers recognizing, managing, and living well with food allergies.
