INTRODUCTION Brazil has the largest commercial cattle herd in the world, with approximately 159 million animals and a production of approximately 8.2 million tons of carcass each year (Anualpec, 2007). From this total, about 30% (2.4 million tons) is exported to several countries around the world. Nevertheless, it will be essential that Brazil employ new technologies in order to increase production and improve meat quality, aiming to satisfy domestic and foreign demand, and thus consolidating current markets and gaining access to new ones.
