INTRODUCTION The quality attributes of food products, including poultry meat, have been attracting an increasing interest in recent years. Modern consumers are often aware of the relationship between meat quality and safety and animal welfare (Hermansen, 2003; Grunert et al., 2004), and many of them believe that organic food products have superior sensory properties and report that they "taste better" (Latter-Dubois, 2000).
