De eiwittransitie en daarmee de landbouw en veehouderij transitie is wellicht de belangrijkste transitie waar we de komende jaren voor staan. Dit boek is een gedetailleerde analyse van die transitie en schetst niet alleen problemen maar onderzoekt vooral ook de oplossingen. En schetst de oplossing die waarschijnlijk de meeste impact zal gaan hebben: precisie fermentatie. Collega’s vonden het boek moeilijk leesbaar. Ik heb het in een zucht uitgelezen. Het boek is een waardevolle bijdragen aan een onderwerp dat nu al tot veel discussie leidt.
