Then why is Seth banging on the window of the closed bar Florian is cleaning? Why does the man seem so upset when Florian invites him back into his apartment?

Seth can't get the angel out of his head, he needs to see him, he needs Florian to come with him on tour. Only, Florian doesn't seem that happy about the prospect, he's convinced that it will only hurt Seth if he comes along, when Seth finds out about his past.
