Introduction It is widely suggested that plant based diets contribute to reducing the risk of development of chronic diseases such as cancer, atherosclerosis, cardiac dysfunction, diabetes, hypertension and neurodegenerative disorders (Chin 1994, Dan 1997, Di Pentima 1995, Forney 1991, 1999). This function is largely due to the antioxidant effects of their bioactive components. One common denominator in the pathogensis of most chronic diseases is the implication of oxidative stress mechanisms (Hansen 1992, Bailey 1993, Fahey 1997).
