An intriguing concept high-quality, fresh bread in less time than it takes to boil water. The authors' promises of no kneading, no starter, no proofing yeast and no need for a bread machine is based on the concept of mixed and risen high-moisture dough stored in the fridge for up to two weeks (dough is cut into pieces and popped in the oven for fresh loaves as desired). Note: for those tracking minutes, the five-minutes doesn't include the 20-minute resting time for dough or 30 minutes for baking. After concise, introductory chapters on ingredients, equipment, and tips and techniques, readers are presented with the master recipe, a free-form loaf of French boule that is the model for all breads in the book. While experienced bakers and true gourmands will skip this one, those looking for an innovative approach to making bread just might find it in these recipes.

See AllExcellent intro to delicious bread baking
Bought the hardcover edition quite a while ago, and just started using it in the last several months. By no means the last word, but if you want a hobby that saves you money, and earns you the admiration of your friends, I can't recommend this book enough as an intro to quick, easy, impressive bread baking. Came on here to buy it again because I've lost two hardcover copies to friends who can't bear to part with it after I've loaned it to them. I should be able to keep this one!
Love this book
Each time I made the doughs from the recipe, the end product consistently comes out perfect. I’m just a regular home cook that follows recipes. I am not a chef nor baker. I have made the master boule dough, the buttermilk loaf bread, the olive oil dough and everything came out amazing. I can say that I’m so confident about my baking through this book and my husband is happy with it all the time. I recommend this to anyone. I’m looking forward to trying the other recipes in the book.
It’s fine
If you really, truly only have 5 minutes a day to make bread, sure, this book is fine. If you want to make bread with great flavor, crumb, and a nice crispy crust, this ain’t it.
