Often in life over time wonderful things are lost, never to be found again. As a professional chef with almost thirty years of experience on the line, one of the hardest things is to recreate recipes found during our early careers. This commercial cookbook was driven by the deep passion for creating something brilliant.

In the intensity of a commercial kitchen, we sometimes make the critical mistake of not holding on dearly to the recipes that cause such a visceral reaction, reactions that help us understand why we chose our trade to begin with.
