This gluten free dairy free cookbook is intended for those who want clean, less refined recipes and a more nutritious, whole food approach, not just good looking highly processed foods with empty calories. The main reason I’m concentrating on real food and anti-inflammatory ingredients is because most gluten free (and some dairy free) foods are often made with flours and/or starches and processed sugars that don’t bring any nutritional benefit. These ingredients make seemingly healthy foods - unhealthy.
Though all of the recipes in this book are dairy free, gluten free, corn free, refined sugar free and soy free, some of them are also paleo or whole thirty friendly. Plus vegan recipes for those who want to limit meat and eggs.
Disappointed by most gluten free and dairy free products / recipes on the market, I decided to create my own. As I acquired many food allergies, sensitivities and intolerances in my late 20’s, improving my diet became a life changing experience for me.
After many years through error and trials I managed to reverse most of my allergies and heal my body through dietary changes. The key is not just avoid gluten and dairy but also embrace the whole foods in our diet and remove all highly processed ingredients - and that’s best achieved in our kitchen!
I’ve tried all elimination diets available and they all have positive effect in the short run. But I found that the key to maintaining your way of eating under control is access to (healthier, clean) alternatives whenever you need them.
Therefore I included a variety of recipes, some suitable for whole thirty or paleo and some that include gluten free grains, legumes and dairy free alternatives. So whenever you feel like quitting or having a sweet craving some time to time, or need a celebration dessert made with clean ingredients and without refined sugar – the book will help you maintain a healthy balanced diet.

Baked goods (breads, cakes, cookies) are all made without preservatives, dough conditioners, gums, or flavor enhancers. Also in order to keep the ingredients as clean as possible I used gluten free sourdough starter in recipes that require leavening.
