Underlying all the opinions, though, is the fact that ribs need to be cooked long and slow with medium-temperature indirect heat. The initial cooking time is 1 1/2 to 2 hours in a grill that is kept at 200°F to 250°F. Keep the lid closed until the final 5 to 10 minutes, when you can baste them with barbecue sauce. You can also pre-cook the ribs in your oven and then transfer them to the barbecue for the last 5 to 10 minutes of basting. Ribs benefit more than almost any other food from authentic smoky flavor and aroma, so experiment with wood chips on the coals (or in a smoker box for gas grills).”
