Outlines of Dairy Bacteriology, 8th edition

Dairying has grown mostly out of experience. Many things known about it are a result of observation, but the reason for their existence is a mystery.

The modern dairying tries to build more accurate knowledge about itself on a broader foundation. Bacteriology, as a science, plays an important role in the process of recognizing and development of dairying, because the bacteriological research can predict the future progress of the dairying.

As a result of that, a subject of Dairy Bacteriology has been created and now it is part of almost every Dairy School. The modern dairy adopts the methods developed from a bacteriological study. This leads to rapid development of the subject, which brings up the need for frequent revision of the work.

Having that need in mind, this manual was created as an outline of the subject for the students of Dairy.

The intention of this book (manual) is to serve the practical dairy operators who want to understand the reasons and principles of this art. It contains a lot of references to original investigations as additional help to the operators.
