American Test Kitchen Gets it Right
As usual, ATK recipes and cookbooks are reliable and delicious. Their step by step is wonderfully clear for novices. I am particularly fond of the explanations for the ingredients and their chemistry - understanding really improves my execution.
I am not gluten free, but I find the gluten free cooking and recipes have introduced a broader range of ingredients and interesting flavors and textures. It would be great to see ATK celebrate this attribute e.g., using flours like Chestnut, Hazelnut, etc., as a ingredient in and of themselves vs a substitute.
My only quibble is the lack of calories counts and nutrition information in the recipes. While the ingredients are clear and I can look up the nutritional values for each ingredient, it would be useful to have it provided. While many people don't calories count some of us must do this for ourselves or those we cook for.
