My food philosophy:

I haven’t always been this way.
Avocados frightened me as a child (green and mushy – ummm, no thanks!). Unfamiliar food was weird and not coming anywhere near my plate.
It wasn’t until my 30s that I even attempted sushi, and just as I opened up my mind to raw fish, I transitioned to a vegetarian diet.
This recipe book came about partly as a reaction to the endless rounds from curious friends of, “So, what do you eat?” It was also borne of necessity. Where I live now in Costa Rica, I can’t always find the ingredients I need, and there’s no jumping online to order a box of supplies.
So simple and fresh is the name of my cooking game. Inside, you will find 50+ recipes, most of which call for whole, easy-to-find ingredients. All of the recipes are vegan AND gluten free. Some are also raw.
A few perks of vegan cooking: Sample the uncooked chocolate chip cookie dough sans salmonella poisoning. Munch the Chickpea of the Sea sandwich without stressing over mercury poisoning. By choosing these meals, you’re also being kind to other living, breathing beings – and our planet. And – despite what some meat-eaters might think – it’s not all about salad!
These recipes are my own variations on common meals, dishes that provide my mind with energy, give my body a healthy glow and feed my heart and soul, all without animal products. I hope they will do the same for you and your loved ones.
