Internal temp!
The book is very interesting. However, when you’re new at baking cheesecakes, you would like to know the internal temp your Cheesecake should be before removing it from the oven! The jiggle test could mean anything when you’re not a seasoned baker! I’ve dealt with weeping, ( a pool, a liquid after the cheesecake has cooled) the cheesecake, falling apart, and also burning it, etc., etc. A little more detail on internal temp would be helpful!
